Founded in 1893 in Aÿ, Collery released its first vintage in early 1895, and went on to win a Gold medal in Paris in 1904. Since then, the estate has been committed to making outstanding Champagne wines to the delight of connoisseurs and fizz-lovers everywhere. Born and raised in Champagne, Cellar Master, Julien Lefevre, has had an extensive experience working for multiple Champagne houses and combines the use of vats and barrels to create wines with excellent balance. Expect warm notes of pear and zesty orange. This wine pairs excellently with oysters, salmon, truffle ravioli and creamy cheeses.
